We make our Yam Boureka filling using fresh yam that is cooked before mashing it with a hint of salted butter, along with a pinch of black pepper and kosher salt. Separately, we sate’ freshly minced garlic and chopped dill then and add them to the mashed yam. Once the Bourekas are filled and ready for the oven, we embellish the tops with a sprinkling of poppy seeds.

DOUGH: Whole Purpose Flour, Water, Salted Butter
FILLING: Potatoes Yams, Sautéed Garlic, Dill, Kosher Salt, Black Pepper
