Mushroom Bourekas

Starting with fresh ingredients, our Mushroom Bourekas feature a filling made of sliced whole cremini mushrooms and crisp scallions sautéed in olive oil with a pinch of kosher salt and black pepper. Once the dough is filled with the freshly prepared mix and ready to go in the oven, we embellish each triangle with sesame and nigella seeds.

DOUGH: Whole Purpose Flour, Water, Salted Butter
FILLING: Cremini Mushrooms, Scallions, Kosher Salt, Black Pepper
GARNISH: Sesame and Nigella Seeds

Cheese Bourekas

Our Cheese Boureka filling is made from freshly bought, crumbly goat feta cheese which is grated before being blended with an egg and a pinch of black pepper. After the dough of each Boureka is filled and ready to enter the oven, we embellish the tops of every triangle with tiny sesame seeds.

INGREDIENTS
DOUGH: Whole Purpose Flour, Water, Salted Butter
FILLING: Feta Cheese, Egg, Black Pepper
GARNISH: Sesame Seeds

Spinach & Cheese Bourekas

We make our Spinach & Cheese Boureka filling from freshly bought crumbly goat feta cheese, which is grated before being blended with an egg and a pinch of black pepper. Separately, we lightly sate’ fresh spinach then mix it with the cheese. Once the Boureka is filled and ready for the baking, we sprinkle the tops with caraway seeds.

FILLING: Feta Cheese, Spinach, Egg, Black Pepper pepper, egg

Potato Bourekas

Using only the freshest ingredients, we make our Potato Boureka filling using russet potatoes we cook before mashing with a hint of salted butter, along with a pinch of black pepper and kosher salt. Separately, we caramelize yellow onions in olive oil and add them to the mashed potatoes. Once the Bourekas are filled and ready for the oven, we embellish the tops with a sprinkling of nigella seeds.

FILLING: Russet Potatoes, Caramelized Yellow Onions, Kosher Salt, Black Pepper

Seasonal Yam Bourekas

We make our Yam Boureka filling using fresh yam that is cooked before mashing it with a hint of salted butter, along with a pinch of black pepper and kosher salt. Separately, we sate’ freshly minced garlic and chopped dill then add them to the mashed yam. Once the Bourekas are filled and ready for the oven, we embellish the tops with a sprinkling of poppy seeds.

Beautiful Bourekas!

Despite their triangular, round, square or crescent shapes—bourekas can be filled with any variety of savory ingredients.

Bourekas were introduced hundreds, if not thousands, of years ago in Central Asia and Eastern Europe before spreading throughout the Middle East and North Africa. As Bourekas were dispersed across the world by way of people migrations, different cultures, and languages, the recipe was altered to reflect each region’s food sources, and the name changed slightly to reflect the dialect of its people.

Interestingly, while the ingredients used for the dough and fillings shifted to represent different geographic landscapes, the original shapes of Bourekas as individual pieces were maintained the same throughout—half circle, rectangular, cylindrical, square, or rolled into a spiral.

Today, with an ever-growing sophistication in food preparation coupled with the advent of modern baking equipment and kitchen tools, Bourekas can be more easily prepped into occasion-specific sizes and shapes. For example, into miniature two-bite sized triangles ideal for serving as appetizers at special events, or into a plait-shaped (aka loaf) ideal for sharing at an elegant dinner party.
